Coconut Curry Chicken Meatballs

Ingredients:

  • 1 cans coconut milk (NOT lite version)
  • 1 lb ground chicken
  • 2-3 tbsp ginger-garlic paste
  • 2 tbsp panang curry paste
  • 1-2 bell peppers
  • turmeric powder
  • red chili powder
  • 2 tbsp sesame oil
  • 3/4 cup panko

Meatballs

1. Place ground chicken in bowl

2. Add 1 tbsp of panang curry paste

3. Add ginger-garlic paste, salt, and pepper to taste

4. Add panko as necessary to bind

5. form into ~1 inch balls

6. Preheat pan, add sesame oil and sear off meatballs

Coconut Curry

1. Once meatballs are are seared, lower heat and add in coconut milk

2. Add in turmeric, chilli powder to taste and stir

3. Optionally, add vegetables (But do it, eat your veggies)
