Ingredients:

  • 1 lb skinless boneless chicken thighs
  • 3 cloves of garlic
  • 2 tbsp soy sauce
  • 1.5 tbsp mirin
  • 2 tbsp honey
  • 2 cups chicken broth
  • 1/2 cup uncooked rice
  • 1.5 tbsp sesame oil
  • 1 thumb of ginger

GInger Soy Chicken

1. Preheat a steel pan on high heat and preheat oven to 350 degrees Farenheit

2. Season the chicken thighs with sesame oil, salt, garlic powder, and pepper to taste.

3. Sear the chicken thighs until golden brown.

4. Peel garlic cloves while the chicken sears.

5. Turn off the heat and add ginger, garlic cloves, and chicken broth to partially cover the thighs.

6. Add soy sauce, mirin, and honey into pan and stir

7. Place the steel pan in the oven and cook for 40 minutes, flipping the chicken halfway through.

Rice

1. While the chicken cooks, wash 1/2 cup of uncooked basmati rice until the water runs clear.

2. Pour in 1 cup of chicken broth and place in rice cooker until fully cooked.

3. Once finished, fluff up the rice and add in salt to taste

Glaze/Sauce

1. Remove chicken, ginger, and garlic from pan

2. Stir in honey and rice wine vinegar and reduce until thickened

3. Optionally, add a dash of siracha and/or lime juice

4. Brush over chicken and top with scallions.

Plate and enjoy
